It doesn’t get any easier than this. Rub the meat with spices, pour in the the liquid and throw it in the slow cooker. Eight to ten hours later you have flavorful, tender and juicy meat ready for tacos or any other dish you desire. For a quick and easy low carb option lay the meat over a piece of romaine lettuce, top with homemade guacamole and enjoy!
2-3 lb. pasture raised pork shoulder
1/4 cup balsamic vinegar
1/4 cup fresh lime juice
1 Tbsp. paprika
1 Tbsp. cumin
1 Tbsp. chile powder
2 tsp. sea salt
2 tsp. oregano
2 tsp. garlic powder
2 tsp. cinnamon
1 tsp. black pepper
Mix together spices and massage all over the pork shoulder, covering the meat entirely in the spice rub.
Pour the balsamic vinegar and lime juice into the bottom of the slow-cooker and a little on top of the pork.
Cook on low for 8-10 hours. Ideally, at about 8 hours pull the meat apart with a fork, stir the meat into the juices and then cook for another 2 hours.
